What do you normally do on a long weekend? Go on a trip with family or friends? Go hiking or staycation perhaps?
Whenever there is a long weekend I usually make plans on going out with friends or family. Movies, coffee meet up or sometimes even plan a weekend get away.
But this time, I decided to take it slow and go for a staycation and do something that I haven’t done in a while. And that is cooking.
Yes. Cooking. I suddenly miss doing it since I have been very busy at work. And now that I have plenty of time doing it, I took the chance.
So, today I’m going to share with you my way of cooking of meatless pancit canton. It is not only easy and cheap but also healthy.

Ingredients:
2 cups pancit canton
2 cups cabbage shredded
½ cup carrots julienne
½ cup beans julienne
2 cups water
1 tbsp. toasted garlic
1 1/2 tbsp. soy sauce
1/2 tsp. sugar
1/2 tsp. salt
few wet annatto seeds
black pepper to taste
calamansi
Instructions:
1. Add 2 tbsps. of water into the annatto seeds, then mix to bring out the color.
2. Pour it in a pot.
3. Add in the soy sauce.
4. Put the sugar,salt, black pepper and then mix.
5. Add in the toasted garlic and mix again.
6. Next put all the vegetables and then again mix them all together.
7. Bring it to a boil.
8. Toss the noodles and then cook it for 5 more minutes.
9. Serve it with calamansi and enjoy!
